check gauge light on a 2004 gmc envoy xl

my gmc 2004 envoy check guages lights comes on/off. the temp/coolant dials goes froom 100 degrees then to 250 degrees , going back then up, check antifreeze level and checked for leeks. what could be wrong, it is not over heating. ?????? please a single mom having to work this makes me wanna cry b/c if I don't take care of this no one will.

I would make absolutely sure the vehicle is not overheating before assuming anything else.

If it's just a gauge or sensor problem, it's not a big deal and can be addressed when you have the time/money. A gauge issue would require replacement of the instrument cluster. If the coolant temp sensor is faulty, it can be easily replaced. Either of these would need some diagnosis, and a scan of the vehicle's computers would help too.
