Engine size = 5.7L

Done to repair = replaced battery, checked alternator on and off
vehicle, at auto zone, cleaned battery cables, put digital amp probe on
battery cables, saw no draw.

question = My battery goes dead after setting with no apparent reason.
Truck is not driven every day, but seems to die after just a few
days.

If the battery goes dead after sitting for a few days, and battery is good/new,
then there must be a parasitic draw. Max draw rule of thumb is 30-40 milliamps.
Assuming you have checked the draw properly, a faulty module can be hard to
catch.  They can show no draw, then have a draw, then show no draw. Best way
to check is to  have a DVOM in-line with the negative battery cable on milliamp
scale. Use the record  function. This will record highs and lows over a long
period of time.
Removing fuses 1 at a time to isolate the circuit that has the draw, but you will
have to catch it when it has a draw. PCM, 4 w/drve module, radio, are some
areas that can give  this problem. This is assuming the truck has no aftermarket
accessories.  IE- alarm, radio  or amplifier, remote starter, etc as these can all
draw from the battery.
